CARAMEL DRIZZLE + APPLE PIE SPICE POPCORN
Serves 4–6
INGREDIENTS
1/2 cup popcorn kernels (or about 12 cups popped popcorn)
4 tbsp unsalted butter
1/2 cup brown sugar (light or dark)
2 tbsp maple syrup or corn syrup
2 tbsp heavy cream
1/2 tsp vanilla extract
1–1½ tsp apple pie spice
1/2 tsp fine salt (plus more to taste)
Optional:
Flaky sea salt for finishing
Chopped toasted pecans
INSTRUCTIONS
Pop the popcorn and remove any unpopped kernels. Place in a very large mixing bowl.
In a small saucepan over medium heat, melt the butter.
Stir in the brown sugar and maple (or corn) syrup. Bring to a gentle simmer and cook for 2–3 minutes, stirring regularly.
Stir in the heavy cream and simmer for 1 more minute.
Remove from heat. Stir in vanilla extract, salt, and apple pie spice.
Slowly drizzle the caramel over the popcorn while tossing continuously to coat evenly.
Spread onto a parchment-lined baking sheet and let cool for 10–15 minutes to set slightly.
Finish with flaky sea salt if desired. Serve and enjoy.
